For the Crust:

  • 1 can black beans, drained and rinsed
  • 1 can black-eyed peas, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 red bell pepper, diced
  • 1/2 red onion, finely diced
  • 1 avocado, diced
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 lime, juiced
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • 1/4 cup fresh cilantro, chopped

Instructions

1. Prepare the Crust:

  1. In a large bowl, combine black beans, black-eyed peas, corn, red bell pepper, and red onion.
  2. In a separate bowl, whisk together sour cream, mayonnaise, lime juice, cumin, chili powder, salt, and pepper.
  3. Pour the creamy dressing over the bean mixture and gently stir until well combined.
  4. Fold in the diced avocado and chopped cilantro just before serving.
  5. Serve chilled with tortilla chips or as a side dish.

Notes

You can customize the seasonings to taste.
