For the Crust:

  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 1/4 cup granulated sugar
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup sour cream
  • 1/4 cup strong brewed coffee, cooled
  • 2 tsp vanilla extract
  • 1 tbsp instant coffee granules

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F (165°C). Grease a 9-inch springform pan.
  2. Mix graham cracker crumbs, melted butter, and 1/4 cup sugar. Press into the bottom of the pan to form the crust.
  3. In a large bowl, beat cream cheese and 1 cup sugar until smooth. Add eggs one at a time, mixing well after each.
  4. Stir in sour cream, brewed coffee, vanilla extract, and instant coffee granules until fully combined.
  5. Pour the filling over the crust and smooth the top. Bake for 50-60 minutes or until the center is set.
  6. Let cool to room temperature, then refrigerate for at least 4 hours before serving.
