Creamy Chicken Tetrazzini Casserole

A comforting, supremely creamy, and cheesy pasta bake loaded with tender chicken and plump mushrooms, perfect for family dinners and gatherings.

  • 12 oz linguine or spaghetti
  • 4 cups shredded rotisserie chicken or 1.5 lbs cooked chicken breast
  • 2 Tbsp olive oil
  • 1 lb button mushrooms, thickly sliced
  • 1 medium onion, finely chopped
  • 4 garlic cloves, minced
  • 4 Tbsp unsalted butter
  • 1/3 cup all-purpose flour
  • 3 cups low-sodium chicken broth
  • 1 Tbsp lemon juice
  • 2 cups half-and-half (or equal parts milk and heavy cream)
  • 1 1/2 tsp sea salt, plus more to taste
  • 1/4 tsp freshly ground black pepper
  • 1/4 cup chopped parsley, plus more for garnish
  • 1 1/2 cups shredded mozzarella cheese

Instructions

  1. Cook linguine or spaghetti according to package instructions until al dente. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add sliced mushrooms and cook until browned, about 5-7 minutes.
  3. Add chopped onion and minced garlic to the skillet with mushrooms; cook until onions are translucent and fragrant.
  4. In a separate large saucepan, melt butter over medium heat. Whisk in flour and cook for 1-2 minutes to form a roux.
  5. Gradually whisk in chicken broth, stirring constantly until the sauce thickens.
  6. Add lemon juice, half-and-half, sea salt, black pepper, and chopped parsley to the sauce. Stir to combine and heat through.
  7. Add shredded chicken, cooked mushrooms, onions, and garlic to the sauce. Mix well.
  8. Combine the cooked pasta with the creamy chicken mixture and half of the shredded mozzarella cheese.
  9. Transfer the mixture to a greased casserole dish. Sprinkle the remaining mozzarella cheese on top.
  10. Bake in a preheated oven at 350°F (175°C) for 25-30 minutes or until bubbly and golden on top.
  11. Garnish with additional chopped parsley before serving.

Notes

For best results, use rotisserie chicken for convenience and extra flavor. This casserole pairs well with a fresh green salad or roasted vegetables. Leftovers reheat well and can be frozen for future meals.
