Creamy Cajun Chicken and Sausage Pasta Skillet

A quick and flavorful one-pan meal featuring tender chicken, spicy sausage, and a rich Cajun cream sauce over perfectly cooked pasta.

  • 1 pound boneless, skinless chicken breast, cut into bite-sized pieces
  • 1 pound smoked sausage, sliced
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper, to taste
  • 8 ounces pasta of choice (e.g., penne, rotini)
  • 1 cup grated cheddar cheese
  • Fresh parsley, chopped (optional)

Instructions

  1. Cook pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat a couple of tablespoons of oil over medium-high heat. Add the chicken and cook until browned and cooked through. Remove from the skillet and set aside.
  3. Add more oil if needed, then add the sliced sausage. Cook until browned, about 5 minutes. Remove the sausage and set aside with the chicken.
  4. Reduce heat to medium. Add the chopped onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for another minute.
  5. Add the chicken broth, heavy cream, Cajun seasoning, paprika, and cayenne pepper to the skillet. Stir to combine and bring to a simmer.
  6. Return the chicken and sausage to the skillet. Let simmer for a few minutes until the sauce thickens slightly.
  7. Stir in the cooked pasta and grated cheddar cheese until the cheese is melted and the pasta is well coated.
  8. Season with salt and pepper to taste. Serve hot, garnished with chopped parsley if desired.
