Creamy Butternut Squash Pasta with Spinach and Sausage

A delicious and creamy pasta dish featuring butternut squash, spinach, and sausage.

  • 1 pound Italian sausage, casings removed
  • 1 small butternut squash, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 4 cups fresh spinach
  • 1 pound pasta
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  1. Cook pasta according to package directions. Drain and set aside.
  2. In a large skillet, brown sausage over medium heat. Remove and set aside.
  3. In the same skillet, sauté onion and garlic until softened.
  4. Add diced butternut squash and cook until tender.
  5. Return sausage to skillet. Add heavy cream and simmer for 5 minutes.
  6. Stir in fresh spinach until wilted.
  7. Combine sauce with cooked pasta. Season with salt and pepper.
  8. Serve topped with grated Parmesan cheese.

Notes

For a lighter version, substitute half-and-half for heavy cream. Leftovers can be refrigerated for up to 3 days. Reheat gently to prevent the sauce from breaking.
