Creamy Beef & Mushroom Rice Bake

A hearty and flavorful casserole combining ground beef, mushrooms, and rice in a creamy sauce, perfect for a weeknight dinner.

  • 1 lb ground beef
  • 1 cup chopped mushrooms
  • 1 small onion, diced
  • 1 cup uncooked white rice
  • 1 can (10.5 oz) cream of mushroom soup
  • 2 cups beef broth

Instructions

  1. Preheat the oven to 375°F.
  2. Cook the ground beef in a skillet until browned, then drain excess fat.
  3. Add the diced onion and chopped mushrooms to the skillet and cook until the onion is translucent.
  4. In a large mixing bowl, combine the cooked beef mixture, uncooked rice, cream of mushroom soup, and beef broth. Mix well.
  5. Transfer the mixture to a 9×13 inch baking dish.
  6. Cover with foil and bake for 45 minutes.
  7. Remove the foil and continue baking for an additional 15-20 minutes, or until the rice is tender and the top is lightly browned.
