Cranberry Pistachio Dark Chocolate Cookies

For the Crust:

  • 1 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup dried cranberries
  • 1/2 cup shelled pistachios, chopped
  • 1/2 cup dark chocolate chunks

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, and salt.
  3. In a separate large bowl, cream together butter and sugars until light and fluffy. Beat in egg and vanilla.
  4. Gradually mix in the dry ingredients until just combined.
  5. Fold in cranberries, pistachios, and dark chocolate chunks.
  6. Drop tablespoon-sized dough balls onto the prepared baking sheet, spacing them 2 inches apart.
  7. Bake for 10-12 minutes until edges are golden. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
