Cranberry Orange Spice Cake with Citrus Cream Cheese

  • 1 (8 ounce) package cream cheese, room temperature (for frosting)
  • 4 cups powdered sugar (for frosting)
  • 2 tablespoons fresh orange juice (for frosting)
  • 1 teaspoon orange zest (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch cake pans.
  2. In a medium bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt.
  3. In a large bowl, beat sugar and butter until light and fluffy. Add eggs one at a time, beating well after each addition.
  4. Add milk, orange juice, orange zest, and vanilla to the butter mixture; mix until combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Toss cranberries in 1 teaspoon flour and gently fold into the batter.
  7. Divide batter evenly between the prepared pans and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool cakes in pans for 10 minutes, then turn out onto wire racks to cool completely.
  9. For the frosting: Beat butter and cream cheese until smooth. Gradually add powdered sugar, orange juice, and orange zest; beat until creamy.
  10. Frost cooled cake with citrus cream cheese frosting.

Notes

For best results, use fresh cranberries and freshly squeezed orange juice. The cake can be made a day ahead and stored covered at room temperature.
