Crab and Shrimp Stuffed Salmon

  • 4 generous sized pieces of salmon filet
  • 8 ounces lump crab meat
  • 8 raw medium shrimp, chopped
  • 3 teaspoons light flavored oil
  • 2 tablespoons butter
  • 1/2 cup mayonnaise
  • 4 ounces cream cheese
  • 1/4 cup panko breadcrumbs
  • 1 large egg
  • 1 teaspoon Old Bay seasoning
  • 1 teaspoon onion powder
  • 1 teaspoon dried parsley
  • 1 teaspoon fresh or dried dill weed

Instructions

  1. Preheat the oven to 350°F.
  2. Melt butter in a pan over medium heat. Add chopped shrimp and cook for about 1 minute and 30 seconds. Remove from heat and set aside.
  3. In a large bowl, combine mayonnaise, cream cheese, panko breadcrumbs, egg, Old Bay seasoning, onion powder, parsley, and dill weed. Stir in crab meat and the cooked shrimp.
  4. Cut a pocket into each piece of salmon. Rub each piece with oil and season with salt.
  5. Generously stuff and top each piece of salmon with the crab and shrimp mixture.
  6. Bake in the preheated oven for about 25 minutes or until the topping is golden.
