Crab and Shrimp Stuffed Bell Peppers

  • 4 large bell peppers
  • 1/2 lb lump crab meat
  • 1/2 lb small shrimp, peeled and deveined
  • 1 cup cooked white rice
  • 2 tablespoons butter
  • 1 finely diced red onion
  • 2 cloves minced garlic
  • 1 teaspoon paprika
  • 1 teaspoon Italian herbs
  • 1/4 teaspoon cayenne pepper
  • 2 tablespoons lemon juice
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Cut off the tops of the bell peppers and remove seeds and membranes.
  2. In a large skillet, melt butter over medium heat. Add onion and garlic; cook until softened.
  3. Add paprika, Italian herbs, and cayenne pepper; stir for 1 minute.
  4. Stir in crab meat, shrimp, cooked rice, and lemon juice. Season with salt and pepper.
  5. Stuff each bell pepper with the seafood mixture and top with shredded cheese.
  6. Place peppers in a baking dish and cover with foil. Bake for 25 minutes.
  7. Remove foil and bake for an additional 10-15 minutes or until peppers are tender and cheese is melted.
