Crab Cakes with Cilantro and Lime

For the Crust:

  • 1 lb fresh crab meat, drained and picked clean
  • 1/2 cup breadcrumbs
  • 1/4 cup mayonnaise
  • 1 egg, lightly beaten
  • 2 tbsp fresh cilantro, finely chopped
  • 1 tbsp lime zest
  • 1 tbsp lime juice
  • 1 tsp Dijon mustard
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp vegetable oil for frying

Instructions

1. Prepare the Crust:

  1. In a large bowl, combine crab meat, breadcrumbs, mayonnaise, egg, cilantro, lime zest, lime juice, Dijon mustard, garlic powder, salt, and black pepper. Mix gently until well combined.
  2. Form the mixture into 8 equal-sized patties, about 1/2 inch thick.
  3. Heat vegetable oil in a large skillet over medium heat. Once hot, add the crab cakes and cook for 3-4 minutes per side, or until golden brown and crispy.
  4. Transfer the cooked crab cakes to a paper towel-lined plate to drain excess oil.
  5. Serve warm with a side of lime wedges and additional cilantro for garnish.
