Cozy Taco Soup

A warm and hearty taco soup perfect for a flavorful fall night, packed with ground beef, beans, corn, and a blend of spices.

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (15-ounce) can kidney beans, drained and rinsed
  • 1 (15-ounce) can corn, drained
  • 1 (14.5-ounce) can diced tomatoes with green chilies
  • 1 (8-ounce) can tomato sauce
  • 1 (1-ounce) packet taco seasoning mix
  • 2 cups beef broth
  • 1 cup water
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, chopped green onions, tortilla chips

Instructions

  1. In a large pot or Dutch oven, cook ground beef and chopped onion over medium heat until beef is browned and onion is tender; drain excess fat.
  2. Add black beans, kidney beans, corn, diced tomatoes with green chilies, tomato sauce, taco seasoning, beef broth, water, and ground cumin to the pot.
  3. Stir well to combine all ingredients.
  4. Bring the soup to a boil, then reduce heat and simmer uncovered for 20-25 minutes, stirring occasionally.
  5. Season with salt and pepper to taste.
  6. Serve hot with optional toppings such as shredded cheese, sour cream, chopped green onions, and tortilla chips.

Notes

For a thicker soup, simmer longer to reduce liquid. You can substitute ground turkey for beef for a leaner option. Leftovers taste even better the next day as flavors meld.
