Cozy Fall Potato Soup

A warm and comforting potato soup perfect for cozy fall evenings, ready in just 30 minutes with simple ingredients and creamy texture.

  • 4 cups peeled and diced potatoes
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 4 slices bacon, cooked and crumbled
  • 2 tablespoons butter
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 green onions, sliced (for garnish)
  • 1 cup shredded cheddar cheese (optional)

Instructions

  1. In a large pot, melt butter over medium heat. Add chopped onion and garlic; sauté until softened, about 3-4 minutes.
  2. Add diced potatoes, chicken broth, and dried thyme. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.
  3. Using an immersion blender, partially blend the soup to desired consistency, leaving some chunks for texture.
  4. Stir in heavy cream and season with salt and pepper. Heat through but do not boil.
  5. Serve hot, topped with crumbled bacon, sliced green onions, and shredded cheddar cheese if desired.

Notes

For a vegetarian version, substitute vegetable broth for chicken broth and omit bacon. Adjust thickness by blending more or less and adding extra cream if needed.
