Creamy Parmesan Italian Sausage Soup

A hearty and flavorful soup filled with Italian sausage, Parmesan cheese, and a creamy broth, perfect for cozy evenings.

  • 1 lb Italian sausage
  • 1/2 cup diced onion
  • 2 cloves minced garlic
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 4 cups chicken broth
  • 1 can (14.5 oz) petite diced tomatoes
  • 8 ounces ditalini pasta
  • 8 ounces cream cheese, softened
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil

Instructions

  1. Brown and crumble the Italian sausage in a large pot until cooked through. Drain excess grease.
  2. Add diced onion, Italian seasoning, salt, and pepper. Cook for 1-2 minutes.
  3. Stir in minced garlic and cook for 1 minute.
  4. Add diced tomatoes, chicken broth, and pasta. Bring to a boil and cook until pasta is al dente (about 8 minutes).
  5. Reduce heat to medium. Stir in cream cheese and Parmesan cheese until melted (about 5 minutes).
  6. Serve hot, garnished with fresh basil.

Notes

This soup is best served with crusty bread for dipping. You can adjust the spice level by using mild or spicy Italian sausage.
