For the Crust:

  • 2 (8 oz) packages cream cheese, softened
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 2 (15 oz) cans whole kernel corn, drained
  • 1 (4 oz) can diced green chilies
  • 1 cup shredded cheddar cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 2 tablespoons chopped fresh cilantro (optional)
  • Tortilla chips for serving

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C).
  2. In a large mixing bowl, combine softened cream cheese, sour cream, and mayonnaise. Mix until smooth and well combined.
  3. Stir in drained corn, diced green chilies, shredded cheddar cheese, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until all ingredients are evenly distributed.
  4. Transfer the mixture to a baking dish and spread evenly.
  5. Bake for 25-30 minutes or until the dip is hot and bubbly around the edges.
  6. Remove from oven and let cool for 5 minutes. Garnish with fresh cilantro if desired. Serve warm with tortilla chips.
