For the Crust:
- 1 1/2 cups almond flour
- 3 tbsp coconut oil, melted
- 2 tbsp maple syrup
- 1 1/2 cups raw cashews, soaked overnight
- 1/2 cup coconut milk
- 1/4 cup coconut sugar
- 2 tbsp lemon juice
- 1 tsp vanilla extract
- Pinch of salt
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
- Mix almond flour, melted coconut oil, and maple syrup to form the crust. Press into the bottom of each liner.
- Bake crust for 10 minutes, then let cool.
- Blend soaked cashews, coconut milk, coconut sugar, lemon juice, vanilla, and salt until smooth.
- Pour filling over crusts and freeze for at least 4 hours or until set.
- Garnish with shredded coconut or berries before serving.

You can customize the seasonings to taste.
