For the Crust:
- 1 cup dried mango, chopped
- 1 cup shredded coconut
- 1/2 cup almonds
- 1/4 cup coconut oil
- 2 tbsp honey
- 1 tsp vanilla extract
- Pinch of salt
Instructions
1. Prepare the Crust:
- In a food processor, blend almonds until finely ground.
- Add dried mango, shredded coconut, coconut oil, honey, vanilla extract, and salt. Process until mixture sticks together.
- Roll mixture into small balls (about 1-inch diameter).
- Optional: Roll balls in extra shredded coconut for coating.
- Refrigerate for at least 30 minutes before serving.
