For the Crust:

  • 1 9-inch pie crust, unbaked
  • 4 cups fresh rhubarb, chopped
  • 1 1/2 cups granulated sugar
  • 3 tablespoons all-purpose flour
  • 3 large eggs
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/4 cup unsalted butter, melted

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C).
  2. Place the chopped rhubarb in the unbaked pie crust, spreading evenly.
  3. In a medium bowl, whisk together sugar, flour, eggs, salt, and vanilla extract until smooth.
  4. Pour the custard mixture over the rhubarb in the pie crust.
  5. Drizzle melted butter evenly over the top of the filling.
  6. Bake for 10 minutes, then reduce oven temperature to 350°F (175°C) and bake for an additional 30-35 minutes, or until the custard is set.
  7. Allow the pie to cool completely before serving.
