Lobster Rolls Butter Mayo

Classic New England-style lobster rolls with a rich buttery and creamy mayo dressing.

For the Crust:

  • 1 lb cooked lobster meat, chopped
  • 1/4 cup mayonnaise
  • 2 tbsp unsalted butter, melted
  • 1 tbsp lemon juice
  • 1/4 cup celery, finely diced
  • 1 tbsp fresh chives, chopped
  • Salt and pepper to taste
  • 4 New England-style hot dog buns
  • 2 tbsp butter, for toasting buns

Instructions

1. Prepare the Crust:

  1. In a large bowl, combine lobster meat, mayonnaise, melted butter, lemon juice, celery, chives, salt, and pepper. Mix gently.
  2. Heat a skillet over medium heat and butter the insides of the hot dog buns.
  3. Toast the buns in the skillet until golden brown, about 2 minutes per side.
  4. Spoon the lobster mixture generously into each toasted bun.
  5. Serve immediately with extra lemon wedges if desired.
