A hearty and traditional Irish stew made with tender lamb, potatoes, and carrots, simmered in a rich broth.

For the Crust:

  • 1.5 lbs lamb shoulder, cut into chunks
  • 4 large potatoes, peeled and quartered
  • 3 large carrots, peeled and sliced
  • 1 large onion, chopped
  • 4 cups beef or lamb broth
  • 2 tbsp flour
  • 2 tbsp vegetable oil
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Heat oil in a large pot over medium heat. Add lamb and brown on all sides. Remove and set aside.
  2. In the same pot, sauté onions until soft. Sprinkle flour over onions and stir to combine.
  3. Return lamb to the pot. Add broth, potatoes, carrots, thyme, rosemary, salt, and pepper.
  4. Bring to a boil, then reduce heat to low. Cover and simmer for 1.5 to 2 hours, until lamb is tender.
  5. Adjust seasoning if needed and serve hot.

Notes

You can customize the seasonings to taste.
