For the Crust:
1 cup canned pumpkin puree
1/2 cup granulated sugar
1/4 cup vegetable oil
1 large egg
1 tsp vanilla extract
1 1/2 cups all-purpose flour
2 tsp baking powder
1/2 tsp salt
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 cup unsalted butter, melted
1/2 cup granulated sugar
1 tbsp ground cinnamon
Instructions
1. Prepare the Crust:
Preheat oven to 350°F (175°C). Grease a mini muffin pan or line with paper liners.
In a large bowl, mix pumpkin puree, 1/2 cup sugar, oil, egg, and vanilla until smooth. In another bowl, whisk flour, baking powder, salt, 1 tsp cinnamon, and nutmeg. Gradually stir dry ingredients into wet until just combined.
Spoon batter into prepared mini muffin cups, filling each about 3/4 full. Bake for 12-15 minutes, or until a toothpick comes out clean. Let cool slightly.
In a small bowl, mix 1/2 cup sugar and 1 tbsp cinnamon. Brush each warm bite with melted butter, then roll in cinnamon sugar mixture until coated. Serve warm or at room temperature.
