Cinnamon Sugar French Toast Muffins

Delicious and easy-to-make muffins that combine the flavors of French toast with the convenience of a muffin.

For the Crust:

  • 6 slices of bread, cubed
  • 4 large eggs
  • 1 cup milk
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/4 cup melted butter
  • 2 tbsp brown sugar
  • 1/2 tsp cinnamon (for topping)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and grease a muffin tin.
  2. In a large bowl, whisk together eggs, milk, granulated sugar, vanilla, and cinnamon.
  3. Add the cubed bread to the egg mixture and stir until all bread is coated. Let sit for 10 minutes.
  4. Divide the bread mixture evenly among the muffin cups, pressing down slightly.
  5. Bake for 20-25 minutes or until golden brown and set.
  6. While muffins are baking, mix melted butter, brown sugar, and cinnamon in a small bowl.
  7. Remove muffins from oven and immediately brush with the butter-sugar mixture.
  8. Let cool slightly before serving.

Notes

You can customize the seasonings to taste.
