These Cinnamon Peach Crumble Bars feature a buttery oat crust, a sweet cinnamon-spiced peach filling, and a crumbly topping for a perfect summer dessert.

  • 2 cups (about 3 medium) peeled and diced peaches
  • 1/4 cup granulated sugar
  • 2 teaspoons cornstarch
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon lemon juice
  • 1 1/3 cups rolled oats
  • 1 cup all-purpose flour
  • 1/3 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper and set aside.
  2. In a medium bowl, gently stir together the diced peaches, sugar, cornstarch, cinnamon, and lemon juice. Set aside.
  3. In a separate bowl, combine the oats, flour, sugar, salt, and vanilla (if using). Add the softened butter and mix until the mixture is crumbly and holds together when pressed.
  4. Reserve 3/4 cup of the oat mixture for the topping. Press the remaining mixture into the bottom of the prepared pan to form the crust.
  5. Spread the peach filling evenly over the crust, using a slotted spoon to minimize excess liquid.
  6. Sprinkle the reserved oat mixture over the peaches, pressing down lightly.
  7. Bake for 35-40 minutes, or until the topping is golden brown and the peaches are bubbly.
  8. Allow the bars to cool completely before slicing into squares.

Notes

Use fresh peaches for the best flavor, but canned peaches (drained) can be substituted. For a gluten-free version, use certified gluten-free oats and flour. These bars can be stored in an airtight container at room temperature for up to 3 days.
