Cinnamon Donut Bread

A tender, sugar-kissed quick bread featuring fragrant cinnamon swirls throughout, perfect for a cozy morning treat or sweet afternoon snack. The bread is finished with a delectable cinnamon-sugar coating.

  • 1/4 cup canola oil or avocado oil
  • 1/4 cup softened unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs at room temperature
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup buttermilk
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon molasses
  • 1/2 cup melted unsalted butter (for coating)
  • 1/4 cup granulated sugar (for coating)
  • 1/4 cup light brown sugar (for coating)
  • 1/2 teaspoon ground cinnamon (for coating)

Instructions

  1. Preheat oven to 350°F. Grease a loaf pan with nonstick cooking spray and set aside.
  2. In a large mixing bowl, combine oil, butter, and sugar until well combined. Add eggs and vanilla extract and mix until smooth.
  3. Gently stir in dry ingredients (flour, baking powder, salt) and buttermilk until a smooth batter forms. Scrape sides to ensure no lumps are present.
  4. Reserve 1/2 cup of the batter in a separate small bowl. Stir cinnamon and molasses into this reserved batter until smooth.
  5. Pour half of the plain batter into the prepared loaf pan. Spoon half of the cinnamon batter in dollops over the plain batter.
  6. Pour remaining plain batter over the top. Spoon remaining cinnamon batter on top.
  7. Using a butter knife, swirl the two batters together to create marbled effect.
  8. Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean with moist crumbs.
  9. While bread bakes, mix melted butter with sugar and cinnamon mixture in a shallow dish.
  10. Once bread is done baking and slightly cooled, brush or dip all sides in melted butter, then roll in cinnamon-sugar mixture to coat evenly.
  11. Cool completely before slicing.

Notes

The batter should be smooth but slightly runny. Be careful not to overmix to maintain tender crumb structure. The cinnamon swirl batter is much thicker than the plain batter, so the molasses helps achieve the right consistency.
