For the Crust:
1 cup unsalted butter, softened
1 cup granulated sugar
1 cup brown sugar
2 large eggs
1 tsp vanilla extract
3 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1 tsp ground cinnamon
8 oz cream cheese, softened
1/4 cup powdered sugar
1 tsp cinnamon
Instructions
1. Prepare the Crust:
Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
Beat in eggs one at a time, then stir in vanilla extract.
In a separate bowl, whisk together flour, baking soda, salt, and cinnamon. Gradually add to the wet ingredients, mixing until combined.
In another bowl, mix softened cream cheese, powdered sugar, and cinnamon until smooth.
Take a tablespoon of cookie dough, flatten it, place a teaspoon of cream cheese filling in the center, then cover with another tablespoon of dough. Seal edges and roll into a ball.
Place cookies on prepared baking sheets, spacing them 2 inches apart. Bake for 12-14 minutes or until edges are golden.
Let cookies cool on baking sheets for 5 minutes before transferring to a wire rack.
