Cilantro-Lime Chicken Bowls with Peach Salsa

A colorful and vibrant weeknight dinner packed with protein, fruits, and a ton of flavor, perfect for meal prep or a simple family meal.

  • 3 medium yellow peaches, pitted and diced
  • 1 sweet red bell pepper, diced
  • 1/4 cup red onion, diced
  • 3 green onions, finely chopped
  • 1/2 bunch cilantro, chopped
  • 2 tablespoons freshly squeezed lime juice (or more to taste)
  • 1/4 teaspoon chili powder (or more to taste)
  • 1/4 teaspoon salt (or more to taste)
  • 1 lb skinless, boneless chicken breasts, sliced
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1/4 teaspoon salt
  • Freshly ground black pepper, to taste
  • 2 tablespoons olive oil
  • 2 tablespoons freshly squeezed lime juice (juice from 1/2 lime)
  • 2 tablespoons honey
  • 2 tablespoons salted butter
  • 2 cups cooked Jasmine rice
  • Fresh cilantro, chopped (for garnish)
  • 1 lime, sliced (for garnish)

Instructions

  1. Prepare the peach salsa by combining diced peaches, red bell pepper, red onion, green onions, cilantro, lime juice, chili powder, and salt in a bowl. Mix well and set aside.
  2. Season the sliced chicken breasts with smoked paprika, chili powder, salt, and black pepper.
  3. Heat olive oil in a skillet over medium heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes per side.
  4. In a small bowl, whisk together lime juice, honey, and butter until combined.
  5. Once the chicken is cooked, pour the honey-lime butter sauce over the chicken in the skillet and toss to coat evenly.
  6. To assemble the bowls, place cooked Jasmine rice at the base, top with the cilantro-lime honey chicken, and spoon peach salsa over the top.
  7. Garnish with fresh chopped cilantro and lime slices before serving.

Notes

This recipe is great for meal prep and can be served warm or cold. Adjust the chili powder and lime juice in the salsa to your taste preference for more heat or tanginess.
