For the Crust:
1 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 tsp vanilla extract
2 1/2 cups all-purpose flour
1 tsp baking powder
1/2 tsp salt
8 oz cream cheese, softened
1/4 cup powdered sugar
1 tsp cinnamon
1/2 cup granulated sugar (for coating)
1 tbsp cinnamon (for coating)
Instructions
1. Prepare the Crust:
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, cream together butter and sugar until light and fluffy. Add eggs one at a time, then vanilla extract.
In another bowl, whisk together flour, baking powder, and salt. Gradually mix into the wet ingredients until combined.
In a separate bowl, beat cream cheese, powdered sugar, and cinnamon until smooth.
Roll dough into 1-inch balls and flatten slightly. Place a small spoonful of cream cheese mixture in the center, then fold dough around it and roll into a ball again.
Bake for 12-15 minutes or until edges are lightly golden.
While warm, roll cookies in a mixture of cinnamon and sugar to coat.
