For the Crust:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 4 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 1/4 cup granulated sugar
  • 1 tbsp ground cinnamon

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together butter and 1 cup sugar until light and fluffy. Beat in egg and 1 tsp vanilla.
  3. In another bowl, whisk together flour, baking powder, and salt. Gradually mix into the butter mixture until combined.
  4. In a separate bowl, beat cream cheese, powdered sugar, and 1/2 tsp vanilla until smooth.
  5. Roll dough into 1-inch balls, flatten slightly, and place a small dollop of cream cheese mixture in the center. Fold dough over and seal.
  6. Mix 1/4 cup sugar and cinnamon in a shallow bowl. Roll each cookie in the cinnamon-sugar mixture.
  7. Place cookies on the prepared baking sheet and bake for 12-15 minutes until edges are golden. Cool before serving.
