For the Crust:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1/2 cup granulated sugar
- 1 tablespoon ground cinnamon
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together butter and sugar until light and fluffy. Beat in egg and vanilla extract.
- In another bowl, whisk together flour, baking powder, and salt. Gradually add to the butter mixture, mixing until combined.
- In a separate bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth.
- Roll out the cookie dough into small balls, flatten slightly, and place a teaspoon of cream cheese filling in the center. Fold the edges over to seal.
- Roll each filled cookie in the cinnamon-sugar mixture and place on the baking sheet.
- Bake for 12-15 minutes or until edges are golden. Let cool before serving.
