Christmas Gooey Butter Cookies

Soft, melt-in-your-mouth Christmas cookies made with cream cheese, butter, and cake mix, rolled in festive sprinkles and powdered sugar for a gooey, buttery treat perfect for the holiday season.

  • 8 ounces cream cheese, softened
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 large egg, room temperature
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon almond extract (optional)
  • 1 (15.25 ounce) box white cake mix
  • 1/2 cup Christmas sprinkles, divided
  • 1/2 cup powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Using an electric mixer, cream together the cream cheese and butter until smooth.
  3. Add the egg, vanilla extract, and almond extract (if using) and mix until combined, scraping sides as needed.
  4. Beat in the white cake mix until well blended.
  5. Stir in 1/4 cup of the Christmas sprinkles.
  6. Cover the dough and refrigerate for 1-2 hours to chill.
  7. Scoop 1-inch dough balls, then roll each ball first in the remaining sprinkles and then in powdered sugar until fully coated.
  8. Place dough balls 2 inches apart on the prepared baking sheets and bake for 10-12 minutes or until edges are lightly golden.
  9. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely. Optionally, sift additional powdered sugar on top.

1. Use white cake mix for best flavor and texture, but you can use any cake mix flavor to customize. 2. Chilling the dough is essential to prevent spreading and to enhance texture. 3. Roll cookies in sprinkles before powdered sugar for a festive look.
