Chocolate Raspberry Crumb Bars

These Chocolate Raspberry Crumb Bars have buttery crumb layers, rich chocolate, and bursts of raspberry, combining a crumbly brown sugar crust with a creamy chocolate layer and raspberry preserves.

  • 1 cup unsalted butter, at room temperature
  • 2 cups all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 teaspoon salt
  • 2 cups semisweet chocolate chips, divided
  • 1 (14 oz) can sweetened condensed milk
  • 1/3 cup seedless raspberry preserves

Instructions

  1. Preheat oven to 350°F. Spray a 13×9 inch baking pan and line the bottom with parchment paper.
  2. In a large bowl, cream together the butter and brown sugar. Add flour and salt and mix until crumbly.
  3. Press about 3/4 of the crumb mixture into the bottom of the prepared pan. Bake for about 12 minutes or until edges are lightly browned.
  4. In a microwave-safe bowl, melt 1 cup of the chocolate chips with the sweetened condensed milk, stirring until smooth.
  5. Spread the chocolate mixture over the hot crust.
  6. Crumble the remaining crumb mixture over the chocolate layer. Sprinkle the remaining chocolate chips on top.
  7. Drop teaspoonfuls of raspberry preserves evenly over the top.
  8. Bake for 25 to 30 minutes or until the center is set and the topping is lightly golden.
  9. Cool completely before cutting into bars.

Notes

Use room temperature butter for easier mixing. Let bars cool completely to ensure clean cutting. Raspberry preserves add a tart contrast to the rich chocolate and buttery crumb.
