Chocolate Raspberry Crumb Bars

These bars feature creamy chocolate, raspberry preserves, a buttery crust, and a crunchy crumb topping. A perfect blend of sweet, tart, and irresistible flavors.

  • 1 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup bittersweet chocolate chips
  • 1 cup semi-sweet chocolate chips
  • 14 oz sweetened condensed milk
  • 1/2 to 2/3 cup raspberry preserves

Instructions

  1. Preheat oven to 350°F. Grease a 13 x 9-inch baking pan.
  2. In a large bowl, cream together butter and brown sugar. Add flour and salt and mix until crumbly.
  3. Press 1 3/4 cups of crumb mixture into the bottom of the prepared baking pan.
  4. Bake for 10-12 minutes or until golden brown. Remove but leave oven on.
  5. In a microwave-safe bowl, combine sweetened condensed milk and bittersweet chocolate chips. Heat on medium in 30-second intervals, stirring until melted and smooth.
  6. Pour chocolate mixture over hot crust and spread evenly.
  7. Sprinkle reserved crumb mixture over chocolate layer. Drop small teaspoonfuls of raspberry preserves over the crumb mixture.
  8. Sprinkle with semi-sweet chocolate chips and return to oven.
  9. Bake for 25-30 minutes or until set. Cool completely before cutting into bars.

Notes

If raspberry preserves are too thick, stir in 1 tablespoon of water before spreading. Allow bars to cool completely for easier cutting. These bars can be stored in an airtight container for several days.
