Chocolate Peanut Butter Cheesecake Cupcakes

For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/3 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup water
  • 1/3 cup vegetable oil
  • 1 tbsp white vinegar
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 1/2 cup creamy peanut butter
  • 1/4 cup powdered sugar
  • 1 egg

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, and salt.
  3. Add water, vegetable oil, vinegar, and vanilla extract to the dry ingredients. Mix until smooth.
  4. In a separate bowl, beat cream cheese, peanut butter, powdered sugar, and egg until creamy.
  5. Fill cupcake liners halfway with chocolate batter. Drop a spoonful of peanut butter cheesecake mixture into the center of each.
  6. Bake for 20-25 minutes or until a toothpick inserted comes out clean. Cool completely before serving.
