For the Crust:
- 1 1/2 cups chocolate cookie crumbs
- 1/4 cup melted butter
- 1 1/2 cups heavy cream
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1 can (21 oz) cherry pie filling
- 1/2 cup chocolate shavings (for garnish)
Instructions
1. Prepare the Crust:
- In a bowl, mix chocolate cookie crumbs and melted butter until combined. Press firmly into a 9-inch pie dish to form the crust.
- In a large bowl, whip the heavy cream until stiff peaks form. Set aside.
- In another bowl, beat the cream cheese, powdered sugar, and vanilla until smooth and creamy.
- Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
- Spread the creamy filling evenly over the prepared crust.
- Top with cherry pie filling, spreading it evenly over the cream layer.
- Sprinkle chocolate shavings on top for garnish.
- Refrigerate for at least 4 hours or until set before serving.
