Chocolate Maraschino Cherry Coconut Truffles

Decadent chocolate truffles filled with maraschino cherries and coated in shredded coconut for a delightful treat.

For the Crust:

  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream
  • 1/2 cup maraschino cherries, drained and finely chopped
  • 1 tsp vanilla extract
  • 1 cup shredded coconut
  • 1/4 cup powdered sugar (optional)

Instructions

1. Prepare the Crust:

  1. In a microwave-safe bowl, heat the heavy cream until warm (about 30 seconds).
  2. Pour the warm cream over the chocolate chips and let sit for 2 minutes. Stir until smooth.
  3. Mix in the chopped maraschino cherries and vanilla extract. Chill the mixture for 2 hours or until firm.
  4. Using a spoon or melon baller, scoop small portions and roll into balls.
  5. Roll each truffle in shredded coconut (and powdered sugar if desired).
  6. Store in the refrigerator until ready to serve.

Notes

You can customize the seasonings to taste.
