For the Crust:
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy cream
- 1/2 cup maraschino cherries, drained and finely chopped
- 1 tsp vanilla extract
- 1 cup shredded coconut
- 1/4 cup powdered sugar (optional)
Instructions
1. Prepare the Crust:
- In a microwave-safe bowl, heat the heavy cream until warm (about 30 seconds).
- Pour the warm cream over the chocolate chips and let sit for 2 minutes. Stir until smooth.
- Mix in the chopped maraschino cherries and vanilla extract. Chill the mixture for 2 hours or until firm.
- Using a spoon or melon baller, scoop small portions and roll into balls.
- Roll each truffle in shredded coconut (and powdered sugar if desired).
- Store in the refrigerator until ready to serve.

You can customize the seasonings to taste.
