Chicken Taco Casserole

A flavorful and easy-to-make casserole combining chicken, taco seasoning, and creamy soup.

  • 4 cups shredded cooked boneless, skinless chicken breast
  • 2 cans (10.5 ounces) Campbell's Condensed Cream of Chicken Soup or 98% Fat Free Cream of Chicken Soup
  • 1 packet (1.25 ounces) of taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 can (16 ounces) of refried beans
  • 1 cup crushed tortilla chips
  • 1/4 cup chopped fresh cilantro (optional)
  • 1/2 cup diced onion (optional)
  • 1/2 cup diced bell pepper (optional)

Instructions

  1. Preheat oven to 350°F.
  2. In a large skillet, combine chicken, taco seasoning, and cook until the seasoning is well combined.
  3. In a separate bowl, mix the cream of chicken soup and shredded cheese.
  4. In a 9×13 inch baking dish, spread half of the refried beans on the bottom.
  5. Add the chicken mixture on top of the beans.
  6. Pour the soup and cheese mixture over the chicken.
  7. Sprinkle crushed tortilla chips on top.
  8. Bake for about 30 minutes or until the cheese is melted and bubbly.
  9. Garnish with cilantro, onion, and bell pepper if desired.

Notes

This recipe is a great way to use leftover chicken and can be customized with additional toppings like diced tomatoes or sour cream.
