Chicken Spaghetti with Burrata Cheese, Cherry Tomatoes, and Lemon Butter Garlic Sauce is a comfort food dinner that a whole family will love. Cherry tomatoes are roasted in olive oil and garlic, chicken is seasoned with paprika, pasta is tossed in lemon butter garlic sauce, topped with fresh basil and toasted pine nuts.

  • 10 oz cherry tomatoes or grape tomatoes (sliced in half)
  • 1.5 lb chicken breast (2 skinless, boneless chicken breasts)
  • 8 oz spaghetti
  • 8 oz Burrata cheese
  • 2 tablespoons olive oil (for tomatoes)
  • 3 cloves garlic minced (for tomatoes)
  • salt and pepper (for tomatoes)
  • ¼ teaspoon salt (for chicken)
  • 2 teaspoons smoked paprika
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil (for chicken)
  • ½ lemon thinly sliced
  • 4 cloves garlic (for sauce)
  • 4 tablespoons butter
  • ½ cup fresh basil chopped
  • ⅓ cup pine nuts lightly toasted

Instructions

  1. Preheat oven to 400 F. Toss cherry tomatoes, sliced in half, with 2 tablespoons of olive oil, 3 cloves minced garlic, salt, and pepper. Spread on a parchment paper-lined baking sheet and roast for about 20 minutes.
  2. Season chicken breasts with ¼ teaspoon salt, 2 teaspoons smoked paprika, and 1 teaspoon Italian seasoning. Cook in 2 tablespoons olive oil on medium heat until cooked through. Slice chicken.
  3. Cook 8 oz spaghetti according to package instructions. In the same skillet, add 4 cloves garlic, 4 tablespoons butter, and ½ lemon thinly sliced; cook until fragrant. Toss cooked spaghetti in the lemon butter garlic sauce.
  4. Assemble by placing spaghetti on plates, top with roasted tomatoes, sliced chicken, torn Burrata cheese, chopped fresh basil, and toasted pine nuts.

Notes

Use Meyer lemon for the best flavor in the sauce. Lightly toast pine nuts in a dry skillet over medium heat for 2-3 minutes until golden. For extra creaminess, let the burrata sit on the hot pasta for a minute before serving.
