  • 1 (32 oz) box chicken broth
  • 1 pint heavy cream
  • 2 tablespoons Dijon mustard
  • 4 cups cooked and cubed chicken (about 1 store-bought rotisserie chicken, 1 pound)
  • 1 (8 oz) package cubed ham
  • 1 (8 oz) block cream cheese, cubed and softened to room temperature
  • Swiss cheese, shredded for serving
  • Homemade or store-bought croutons for serving

Instructions

  1. Melt butter in a large stockpot over medium heat.
  2. Add onion, carrots, celery, garlic, paprika, salt, and pepper; cook, stirring regularly, until carrots have softened, about 10 minutes.
  3. Add chicken broth, heavy cream, Dijon mustard, chicken, ham, and cream cheese; cook, stirring regularly, until soup is hot and cream cheese has melted.
  4. Taste and adjust seasoning if necessary.
  5. Serve hot topped with shredded Swiss cheese and croutons.
