  • 2 cups cooked chicken, shredded or diced
  • 1 cup cooked ham, diced
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 cups milk
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon juice
  • 1/2 teaspoon garlic powder
  • Salt to taste
  • 1 cup shredded Swiss cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup Panko breadcrumbs
  • 2 tablespoons melted butter

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Layer the cooked chicken evenly in the bottom of a casserole dish.
  3. Layer the diced ham evenly over the chicken.
  4. In a saucepan over medium heat, melt 3 tablespoons butter. Sprinkle the flour on top and cook for 1-2 minutes until the mixture is dry and clumpy.
  5. Slowly whisk in the milk, then add the mustard, lemon juice, garlic powder, and salt. Simmer for 3-5 minutes, whisking constantly until the sauce thickens.
  6. Remove from heat and stir in the Swiss and Parmesan cheeses until melted and smooth. Taste and adjust salt if needed.
  7. Pour the cheese sauce evenly over the ham and chicken layers in the casserole dish.
  8. In a small bowl, combine Panko breadcrumbs with melted butter and mix well.
  9. Sprinkle the buttery Panko topping evenly over the casserole.
  10. Bake uncovered for 30-35 minutes or until the breadcrumbs are golden brown and the casserole is bubbly.
  11. Let cool for 5-10 minutes before serving.
