A creamy, cheesy casserole combining shredded chicken, crispy bacon, ranch seasoning, and tater tots baked to golden perfection.

Ingredients

Scale
  • 7 pieces of bacon (or 1/2 cup pre cooked crumbled bacon)
  • 1 cup sour cream OR Greek yogurt
  • 1/2 cup milk
  • 10 oz can cream of chicken soup
  • 1 tsp pepper
  • 2 tbsp ranch seasoning
  • 1 cup shredded Colby jack cheese
  • 3 cups cooked shredded chicken
  • 30 oz bag tater tots
  • 1/3 cup Colby jack cheese (for topping)

Instructions

  1. Preheat oven to 350 degrees F.
  2. Cook the bacon on the stove according to package instructions. Crumble the bacon into smaller pieces.
  3. In a large bowl, whisk together sour cream, milk, cream of chicken soup, pepper, and ranch seasoning.
  4. Stir in half of the shredded cheese and the cooked shredded chicken.
  5. Spray a 9×13 baking dish with non-stick spray.
  6. Place half of the tater tots onto the bottom of the baking dish.
  7. Spread the chicken mixture evenly over the tater tots.
  8. Sprinkle the crumbled bacon over the chicken mixture.
  9. Top with the remaining tater tots and sprinkle with the remaining cheese.
  10. Bake in the preheated oven for 45 minutes or until the tater tots are golden and crispy.

Notes

For best results, use freshly cooked bacon for maximum flavor and crispiness. You can substitute sour cream with Greek yogurt for a tangier taste and added protein. Leftovers reheat well in the oven to maintain crispiness.
