1 1/2 cups all-purpose flour
1 1/2 tsp baking powder
1/4 tsp salt
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
2 large eggs
2 tsp vanilla extract
1/2 cup whole milk
1 cup fresh or frozen cherries, pitted and chopped
1 cup unsalted butter, softened (for frosting)
3 cups powdered sugar
2 tbsp cherry juice or milk
1/2 tsp almond extract
Instructions
Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs one at a time, then add vanilla. Alternate adding flour mixture and milk, mixing until just combined. Fold in chopped cherries.
Divide batter evenly among cupcake liners, filling each about 2/3 full. Bake for 18-22 minutes or until a toothpick comes out clean. Cool completely.
For frosting, beat butter until creamy. Gradually add powdered sugar, cherry juice (or milk), and almond extract. Beat until smooth and fluffy. Frost cooled cupcakes and top with a cherry if desired.
