Cherry Cupcakes

Moist and fluffy vanilla cupcakes studded with juicy cherries and topped with a creamy cherry frosting.

For the Crust:

  • 1 1/2 cups all-purpose flour, 1 tsp baking powder, 1/4 tsp salt, 1/2 cup unsalted butter, softened, 3/4 cup granulated sugar, 2 large eggs, 1 tsp vanilla extract, 1/2 cup whole milk, 1 cup fresh or frozen cherries, pitted and chopped, 1 batch cherry buttercream frosting (butter, powdered sugar, cherry juice, vanilla)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners., In a bowl, whisk together flour, baking powder, and salt. In another bowl, cream butter and sugar until light and fluffy. Beat in eggs one at a time, then add vanilla., Alternately add flour mixture and milk to the butter mixture, beginning and ending with flour. Fold in chopped cherries., Divide batter evenly among cupcake liners. Bake for 18-22 minutes or until a toothpick comes out clean. Cool completely., Prepare frosting by beating butter until smooth, gradually adding powdered sugar, cherry juice, and vanilla until fluffy. Frost cooled cupcakes and top with a cherry if desired.
