For the Crust:
- 2 cups grated zucchini
- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup grated parmesan cheese
- 1 large egg
- 1 cup all-purpose flour
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Squeeze excess moisture from grated zucchini using a clean towel.
- In a large bowl, mix zucchini, mozzarella, parmesan, egg, flour, garlic powder, oregano, salt, and pepper until well combined.
- Spread the mixture evenly on the prepared baking sheet into a rectangle about 1/4-inch thick.
- Bake for 20-25 minutes until golden and firm. Remove from oven and let cool slightly.
- Cut into breadstick-sized strips and serve warm.
