Cheesy Taco Rice

A quick and flavorful one-pot meal combining taco-seasoned rice with melted cheese and your favorite toppings.

For the Crust:

  • 1 cup long-grain white rice
  • 2 cups water or beef broth
  • 1 packet taco seasoning
  • 1 lb ground beef
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped green onions
  • 1/4 cup sour cream (optional)
  • 1 tbsp olive oil

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned, breaking it into crumbles.
  2. Drain excess fat from the beef, then stir in taco seasoning and rice. Cook for 1 minute to toast the rice.
  3. Add water or beef broth, bring to a boil, then reduce heat to low. Cover and simmer for 15-18 minutes until rice is tender.
  4. Remove from heat and sprinkle cheese over the top. Cover for 2 minutes to melt the cheese.
  5. Garnish with diced tomatoes, green onions, and sour cream before serving.

Notes

You can customize the seasonings to taste.
