Cheesy Taco Potatoes

A hearty and cheesy taco-flavored potato casserole featuring seasoned ground beef, tender potatoes, and a blend of melted cheeses, perfect for a comforting weeknight meal.

  • 1 lb ground beef
  • ½ cup diced onions
  • 2 garlic cloves, minced
  • ¼ cup green onions, chopped (plus more for garnish)
  • 1 packet taco seasoning (or 2 tbsp homemade)
  • ¼ cup water
  • 1 10 oz can Rotel or ½ cup diced tomatoes
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp all-purpose chicken seasoning
  • 1 tsp Yo Who's Hungry seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese (or 2 cups Mexican blend)
  • Pickled jalapeños, sliced (optional for garnish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, cook ground beef over medium heat until browned; drain excess fat.
  3. Add diced onions and minced garlic to the beef; cook until onions are translucent.
  4. Stir in taco seasoning, water, Rotel (or diced tomatoes), chili powder, smoked paprika, all-purpose chicken seasoning, Yo Who's Hungry seasoning, salt, and pepper. Simmer for 5 minutes.
  5. In a baking dish, layer cooked potatoes (pre-cooked or boiled) and pour the seasoned beef mixture over them.
  6. Top with shredded cheddar and Monterey Jack cheeses evenly.
  7. Bake in the preheated oven for 20-25 minutes or until cheese is melted and bubbly.
  8. Garnish with chopped green onions and sliced pickled jalapeños if desired before serving.

Notes

For best results, use pre-cooked or boiled potatoes to ensure tenderness. Adjust seasoning to taste and add jalapeños for extra heat. This dish can be prepared ahead and baked just before serving.
