Cheesy Ground Beef and Rice Casserole

A hearty, comforting casserole filled with ground beef, rice, and a rich cheesy sauce.

  • 1 lb. ground beef, 85% lean
  • 1.5 teaspoons Italian seasoning
  • Salt and pepper to taste
  • 3 Tablespoons butter, divided
  • ¾ cup onions, diced
  • 1 Tablespoon garlic, minced
  • 2 ½ cups beef broth
  • 1 ¼ cups uncooked white long grain rice
  • 8 oz. sliced button mushrooms, washed
  • 10.5 oz. cream of mushroom soup
  • ½ cup milk, any kind
  • ½ cup sour cream
  • 2 cups cheddar cheese, divided

Instructions

  1. Preheat oven to 350°F.
  2. Cook the ground beef in a skillet until browned, breaking it into small pieces. Drain excess fat.
  3. Add Italian seasoning, salt, and pepper to the ground beef. Stir well.
  4. In the same skillet, add 2 tablespoons of butter, then sauté the diced onions and minced garlic until softened.
  5. Add sliced mushrooms and cook until they release their moisture and start to brown.
  6. In a large mixing bowl, combine cooked rice, beef broth, cream of mushroom soup, milk, and sour cream. Stir until well combined.
  7. Add the cooked ground beef mixture to the rice mixture and stir.
  8. Transfer the mixture to a greased 9×13-inch baking dish.
  9. Top with cheddar cheese.
  10. Bake for 25-30 minutes or until the cheese is melted and bubbly.

Notes

This casserole can be assembled ahead of time and refrigerated for up to 2 days or frozen for up to 3 months. Use long grain rice for a creamier consistency.
