Cheesy Garlic Butter Roasted Potatoes

Crispy roasted potatoes tossed in garlic butter and topped with melted cheese for a delicious side dish.

For the Crust:

  • 2 lbs baby potatoes, halved
  • 3 tbsp unsalted butter, melted
  • 4 cloves garlic, minced
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded cheddar cheese
  • 2 tbsp chopped fresh parsley

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss halved potatoes with melted butter, minced garlic, thyme, salt, and pepper until evenly coated.
  3. Spread potatoes in a single layer on the prepared baking sheet. Roast for 25-30 minutes, stirring halfway, until golden and crispy.
  4. Remove from oven and sprinkle shredded cheddar cheese evenly over the potatoes. Return to oven for 2-3 minutes until cheese is melted.
  5. Garnish with chopped parsley before serving.
