Cheesy Chicken Noodle Casserole

A comforting and creamy casserole perfect for family meals.

  • 12 ounces dry wide egg noodles
  • 2 cups chopped cooked chicken
  • 20 ounces cream of chicken soup (2 cans)
  • 1 cup milk
  • 10 ounces frozen mixed vegetables, thawed
  • 1 cup shredded cheddar cheese
  • Kosher salt to taste
  • Ground black pepper to taste
  • ¼ cup breadcrumbs
  • 2 tablespoons unsalted butter, melted

Instructions

  1. Preheat the oven to 425°F.
  2. Cook the egg noodles according to package directions. Drain and set aside.
  3. In a large bowl, stir together the noodles, chopped cooked chicken, cream of chicken soup, milk, frozen mixed vegetables, shredded cheddar cheese, salt, and pepper to taste.
  4. Pour the mixture into a greased 9×13-inch baking dish.
  5. In a small bowl, stir together the breadcrumbs and melted butter.
  6. Sprinkle the breadcrumb mixture over the casserole.
  7. Bake for 20 minutes until warm and bubbly. Let cool for 5-10 minutes before serving.
