Cheesy Chicken Broccoli Orzo: Comfort Food in Every Bite!

For the Crust:

  • 1 lb boneless, skinless chicken breasts, cubed
  • 1 cup orzo pasta
  • 2 cups broccoli florets
  • 2 cups chicken broth
  • 1 cup shredded cheddar cheese
  • 1/2 cup heavy cream
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large skillet over medium heat. Add cubed chicken and season with garlic powder, onion powder, salt, and pepper. Cook until browned and fully cooked, about 6-8 minutes.
  2. Add orzo pasta to the skillet and stir to coat with the oil and chicken juices. Pour in chicken broth and bring to a simmer.
  3. Cover and cook for 8-10 minutes, stirring occasionally, until orzo is tender and most of the liquid is absorbed.
  4. Add broccoli florets and heavy cream. Stir well, cover, and cook for another 3-4 minutes until broccoli is tender.
  5. Remove from heat and stir in shredded cheddar cheese until melted and creamy. Serve warm.
