For the Crust:
- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 cup shredded cheddar cheese
- 4 large flour tortillas
- 2 tbsp vegetable oil
- Sour cream and salsa for serving
Instructions
1. Prepare the Crust:
- In a skillet, brown the ground beef over medium heat. Drain excess fat.
- Add onion, garlic, cumin, chili powder, salt, and pepper. Cook until onions are soft.
- Stir in shredded cheddar cheese until melted. Remove from heat.
- Divide the beef mixture among the tortillas, placing it in the center of each.
- Fold the sides of the tortillas inward, then roll tightly to enclose the filling.
- Heat oil in a skillet over medium-high heat. Fry the chimichangas until golden brown on all sides.
- Serve hot with sour cream and salsa.
